The Only Breakfast Casserole You’ll Ever Need (Sweet or Savory!)

If you're anything like us, mornings can get a little... hectic. But this breakfast casserole is our go-to for feeding a crowd, cleaning out the fridge, and actually sitting down to something satisfying. It’s warm, filling, endlessly customizable—and best of all, easy.

Start With the Basics:

At its heart, this dish is just bread, eggs, and milk. From there, it can go savory, sweet, or somewhere in between. Think of it like a choose-your-own-adventure breakfast.

We use:

  • 10 eggs

  • 1 ½ cups of milk

  • 1 loaf of bread (cut into cubes)

Spray your casserole dish (because no one likes stuck-on egg), and layer in your cubed bread.

Savory Style:

Want bacon, egg, and cheese? Ham? Sausage? All fair game.

Here’s what we do:

  • Sprinkle 2 cups of shredded cheese over the bread.

  • Pour the egg + milk mixture over that.

  • Then layer in your cooked bacon, ham, or sausage—whatever’s on hand.

  • Bake at 350°F for 40–45 minutes, uncovered, until golden and set.

Sweet Style (AKA French Toast Casserole):

If you're going the French toast route, skip the cheese and meats.

Instead, add to your egg + milk mix:

  • 2–3 tablespoons brown sugar

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

Pour it over the bread, bake the same way, and serve with powdered sugar, maple syrup, and maybe some fresh fruit on the side.

Why We Love It:

  • It checks the box for starch, fat, and protein—so it’s balanced and filling.

  • It’s kid-approved (even the picky ones).

  • And it works just as well for a laid-back weekend brunch as it does for a weekday reheat-and-eat.

Whether you're in the mood for something sweet and cozy or cheesy and savory, this casserole’s got you. Around here, it’s a tried-and-true favorite—especially when we don’t feel like overthinking breakfast.
