Two Easy Meatless Dinners We Come Back to Again and Again

When you need something dependable but still comforting, these two meals are always in rotation. They’re simple, filling, and easy to pair with sides you probably already love.

Pesto Tortellini with Oven-Roasted Veggies

This is a one-pan (plus pasta pot) kind of dinner — colorful, flavorful, and endlessly adaptable.

Ingredients

  • Pre-made tortellini

  • Jar of basil pesto

  • Cherry tomatoes

  • Red onion

  • Red bell pepper

  • Green bell pepper

  • Head of broccoli

  • Olive oil

  • Salt and pepper

Directions

  1. Preheat oven to 425°F.

  2. While the oven preheats, chop vegetables into large pieces. Spread them on a baking sheet and drizzle with olive oil, salt, and pepper.

  3. Roast vegetables for 45 minutes, turning halfway through.

  4. While veggies roast, cook tortellini according to package directions. Drain and toss with pesto.

  5. Serve pesto tortellini topped with oven-roasted veggies.

Serve With:
A sliced baguette with butter.

Stuffed Shells with Caesar Salad

A classic, comforting dinner that feels a little special without being fussy.

Stuffed Shells

Ingredients

  • 1 box dry stuffed shells, cooked and drained

  • 1 container cottage cheese

  • 2 eggs

  • ¼ cup parmesan cheese

  • 1 tablespoon dried parsley

  • 1 teaspoon dried garlic

  • Salt and pepper

  • 1 jar marinara sauce

  • 2 cups shredded mozzarella cheese

Directions

  1. Preheat oven to 350°F and grease a 9x13 baking dish with cooking spray.

  2. Cook pasta according to package directions.

  3. Mix cottage cheese, eggs, parmesan, parsley, garlic, salt, and pepper until well combined.

  4. Spoon mixture into shells and line them in rows in the baking dish.

  5. Top with marinara sauce and shredded mozzarella.

  6. Bake for 40–45 minutes until bubbly and lightly browned.

Caesar Salad

Ingredients

  • 1 head romaine lettuce, cleaned and chopped

  • Caesar dressing

  • Croutons

Directions
Toss all ingredients together in a large bowl and serve alongside the stuffed shells.
